Hares and jackrabbits are leporids belonging to the genus Lepus. Hares are classified in the same family as rabbits. They are similar in size and form to rabbits and have similar herbivorous diets, but generally have longer ears and live solitarily or in pairs. Also unlike rabbits, their young are able to fend for themselves shortly after birth rather than emerging blind and helpless . Most are fast runners.
Hares spend their lives above ground so do not seek refuge underground like foxes or mink when being hunted. If the hare does not manage to escape the hounds it will eventually tire and the hounds, with their superior stamina, will catch up and kill the hare. Sneak through woods, move slow, stop and go. In more open terrain, you can use binoculars to scope ahead and look for hares – that’s a good technique for game birds as well. If you spot them, stalk slowly into gun range.
In Russia, 4 types of hares are mostly hunted:
The brown hare in Russia is found throughout its European part, in the Transcaucasus, it has acclimatized in a number of areas of Southern Siberia (the foothills of Altai, Salair and Kuznetsk Alatau), Altai, Transbaikal and Krasnoyarsk krais, Novosibirsk, Kemerovo and Irkutsk regions. It also can be found in the Far East: in Khabarovsk and Primorsky krais.
tThe white hare is distributed in a huge part of Russia from the north to the tundra zone inclusive.
lThe Manchurian hare lives in the Far East and North of Russia
yThe tolai hare is found in dry steppes, overgrown with shrubs, the Altai and Sayan Mountains.
Generally nocturnal and shy in nature, hares change their behaviour in the spring, when they can be seen in broad daylight chasing one another around in fields. During this spring frenzy, they sometimes strike one another with their paws (“boxing”). This is usually not competition between males, but a female hitting a male, either to show she is not yet ready to mate or as a test of his determination. The female nests in a depression on the surface of the ground rather than in a burrow, and the young are active as soon as they are born. Litters may consist of three or four young and a female can bear three litters a year, with hares living for up to twelve years. The breeding season lasts from January to August.

When frying a hare, coat the pieces with corn meal or flour, as you would chicken. Brown it on all sides, then reduce the heat and cover the pan, simmering until it’s tender. This provides a moist coating, but takes a little longer. For a crisp coating and shorter cooking time, first boil the hare until it’s almost tender. Pat the pieces dry, roll them in corn meal or flour and fry them.
To see if hare is done, pierce it with a fork. You should be able to insert the fork with ease, and the juices should run clear. Hare is thoroughly cooked when it is no longer pink inside. If you use a meat thermometer, hare is done when a thermometer inserted in the meatiest part reads 180°F (82.2°C)
For roasted hare, rub surfaces with onion, garlic, and lemon. Place on a greased rack in a shallow pan. Brush generously with melted butter and cover loosely with foil. Roast at 325 degrees for 1 to 2 hours. Remove foil during last 1/2 hour to brown.
It is a genus of the Leporidae family. In total, there are about 30 species of hares.
